Dry, Roast & Blanche Cost Effectively

The low calorie, health and nutritional benefits in vegetables is driving an increased demand for methods of processing vegetables without chemicals.  Vegetables are often canned or dried for later use or to mix into other products. Traditionally, vegetables are prepared by blanching in water, steam, or lye then washed with water.  Traditional methods are time consuming, require more resources such, and have negative environmental impacts.

 CDT’s infrared technology can be used to not only blanch but also dry the vegetables.  CDT’s one step process removes the need to use water, reduces energy needed and saves on the costs associated with water treatment. CDT’s infrared drying and heating system also kills off harmful bacteria and insects without using potentially dangerous chemicals. Vegetables that respond positively to catalytic infrared heating include potatoes, tomatoes, onion, corn, and rice.

In a 2012 study in Food Chemistry Journal, researchers used one of CDT’s systems to blanch potatoes before deep frying them at the same temperature as traditionally prepared french fries. Samples were given to a group of panelists who mostly preferred the infrared blanched version. Infrared blanching helps to reduce the environmental impact and leads to a better tasting product.
