The POTCAT uses a patented technology to dry, cure, and kill pathogens found on agricultural products. The heart of the system is the catalytic infrared heater. Infrared radiation is light that is beyond the visible range but transmits heat energy that can be absorbed and reflected. Different objects, with different surface shape, color, and orientation, absorb and reflect the infrared radiation differently.

Water makes up a major part of all organic material such as fruits, vegetables, animals, microbes, and bacteria.  Water absorbs infrared radiation with wavelengths at 3µ, 4.5µ, and 6µ. POTCAT heaters emit infrared radiation that cover this range of wavelengths, and the water present in objects being dried is quickly absorbed by the energy emitted.
