Dry, Roast & Blanche Safely & Effectively

Grains and nuts are usually stored after harvesting for long periods of time.  This requires them to be dried to moisture levels less than 15% to ensure they are not damaged during storage by mold or insect.  Some nuts required additional processing before the drying process can begin. In some instances, the meat around the nut is peeled off with water/chemical mixture before being dried. CDT’s infrared technology is proven to be beneficial as it dries the nuts from the inside out.

Research by the University of Arkansas and the Canadian Gas Association show that insects, larvae, and eggs can be killed effectively through exposure to heat.  The required exposure time decreases as the temperature increases. Rather than heating the air around the grain or the nut, CDT’s infrared heating system directly heats the grain and the nuts.

Research published in Journal of Food Engineering, 2010 conducted a comparison between traditional roasting, roasting with Infrared heating, and the combination of the two methods.  Their conclusion shows that CDT’s infrared heating system can be used safely and effectively for almonds that can also be extended to other nuts.

Infrared heating, when combined with traditional roasting method for almonds, not only passed all pasteurization requirements as set by Federal standards but also reduced the processing time required for medium and high temperature settings.
